Cayenne Roasted Pecans
Makes 4 cups Pecan Halves

2 tablespoons butter
2 tablespoons oil
4 cups fresh pecan halves
1 teaspoon salt
1 teaspoon cayenne pepper
3/4 teaspoon white pepper
1/2 teaspoon black pepper
1/2 teaspoon Tabasco Sauce

1. Heat the butter and oil over medium-high heat in a large, heavy skillet. When foam from butter subsides, add pecans and remaining ingredients and cook, stirring constantly, for 2 minutes. Reduce heat to medium and cook, stirring frequently, for 8 minutes longer.

2. Remove from heat and drain on paper towels. Cool and store in an airtight container.

Sauce Remoulade from Great-Grandma
Makes about 3/4 cup sauce.

1/2 cup mayonnaise
2 tablespoons finely sliced green onions
1 tablespoon finely chopped parsley
1 teaspoon stone ground mustard (Cajun or Creole)
1 teaspoon prepared horseradish
1/4 teaspoon salt
1/4 teaspoon white pepper
1 small “bud” garlic, minced
1 hard-cooked egg, chopped

Combine all ingredients and mix well.
